Peanut Butter Blossom Cookies

Soft, chewy peanut butter cookies rolled in sugar with a piece of chocolate pressed into the center. An easy, eight-ingredient vegan treat ready in under 25 minutes.

Ingredients
  

  • 1/4 cup peanut butter drippy/creamy
  • 1.5 tbsp flour
  • 1/6 cup white sugar
  • 1/2 tsp baking soda
  • 1 tbsp plant milk any
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • 5 pieces chocolate candy

Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Large spoon or spatula
  • Measuring spoons

Method
 

  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, combine all of the ingredients except the chocolate pieces.
  4. Stir the ingredients until the dough becomes less sticky and is fully incorporated.
  5. Roll the dough into 5 even balls.
  6. Press a chocolate piece into the center of each dough ball. Don’t press too hard or you’ll break through the cookie dough.
  7. Bake for 11-13 minutes.
  8. Allow to cool for 5-10 minutes on the baking sheet before transferring to a cooling rack.

Notes

If your peanut butter isn’t drippy, it will be hard to stir. Heat the peanut butter in the microwave in 10-second intervals until it’s creamier. I haven’t tried this with other flours. For smaller cookies, make more dough balls and add more chocolate pieces to cover them all.
