Peanut Butter Blossom Cookies
Soft, chewy peanut butter cookies rolled in sugar with a piece of chocolate pressed into the center. An easy, eight-ingredient vegan treat ready in under 25 minutes.

Method
- Preheat the oven to 350 degrees F.
- Line a baking sheet with parchment paper.
- In a small bowl, combine all of the ingredients except the chocolate pieces.
- Stir the ingredients until the dough becomes less sticky and is fully incorporated.
- Roll the dough into 5 even balls.
- Press a chocolate piece into the center of each dough ball. Don’t press too hard or you’ll break through the cookie dough.
- Bake for 11-13 minutes.
- Allow to cool for 5-10 minutes on the baking sheet before transferring to a cooling rack.
Notes
If your peanut butter isn’t drippy, it will be hard to stir. Heat the peanut butter in the microwave in 10-second intervals until it’s creamier. I haven’t tried this with other flours. For smaller cookies, make more dough balls and add more chocolate pieces to cover them all.
