I grew up on Rudy’s — I always got the brisket or turkey sandwich, piled with red onion, pickles, and soft white bread, dripping in that sauce. Turns out Rudy’s sauce is already vegan (no beef flavor added, I promise), so all it took was a brisket that could hang with the real thing.

Rudy’s BBQ Brisket Sandwich
Thinly sliced vegan brisket piled onto soft white bread with red onion, dill pickles, and plenty of Rudy’s BBQ sauce — just like the sandwiches I grew up on.
Ingredients
Method
- Warm the sliced brisket on the stovetop or grill until heated through.
- Pile the warm brisket onto a slice of bread. Top with Rudy’s BBQ sauce, dill pickle slices, and red onion to your heart’s desire.
- Close up the sandwich with the second slice of bread and serve immediately.
Notes
Use my Vegan BBQ Brisket recipe for the brisket — it needs to chill in the fridge overnight before slicing, so plan ahead.
